Ceviche!

I guess Spike and I have been on a bit of a seafood kick lately, what with the trip to Newick's and the New England Clam Chowdah (you have to say it like that when you're married to the winner of the Most Wicked Boston Accent Contest) we made for the last Patriots game.  So I decided we should try to make the ultimate seafood dish.... ceviche!  Ever since Spike and I tried this amazing dish on our honeymoon in Mexico, I've been wanting to eat it again.  I'm not brave enough to actually cook the seafood in the acid like you're supposed to, so I'm not sure it really counts as ceviche, but it was delicious anyway!

We bought a frozen shellfish mix and cooked it a little bit before marinating it in lemon and lime juice.  After about 15 minutes of it sitting in the juice, I added some red onion and jalapeno in order to marinate those a little too.  Then I chopped up scallions, tomato, avocado, and cilantro and mixed it all together.  In hindsight, I think I should have drained out the juice as the whole mixture was really too tart, but now I know for next time.  I still loved my first attempt and can't wait to improve on it!
