Here Comes Krista Cottontail!

Spike and I are hosting Easter dinner again this year and I'm super excited! We've been planning the menu and I've been researching centerpieces with flowers and eggs and wonderful springy things. I love Easter because it signals the real beginning of spring... sure March 21st is a great date and everything, but Easter means bunnies, chicks, flowers, and candy! All included in the definition of spring, in my mind at least... especially candy.

Every year, we dye Easter eggs and I have to make sure to include my special rainbow egg. A few years ago, my mom and I really outdid ourselves with the eggs (yes, that's Planet Earth back there):We'll see if we can top that this year! My mom also instilled in me the importance of a good Easter basket hunt. I'll never forget the year my mother went to Arizona to visit my grandfather over Easter and carefully hid our baskets in advance with clues all planned out. Well, sure enough, the clues were too hard and we couldn't find one of the baskets. We had to patiently wait until my mom called so she could tell us where the candy was hiding! I've done basket hunts for Spike in the past, but I think this year I'm going to try something new...

I'm especially excited this year because the weather is supposed to be gorgeous: sunny with temperatures in the 70s. This means we can use our porch furniture and eat out in the sunshine... especially now that the squirrels are gone. That's right! The landlord finally took action once he realized they were getting in the walls and he trapped seven while I was in North Carolina. I don't want to know what he does with them once he traps them, but all I know is that my plants will no longer get eaten and we can eat Easter dinner in peace!

So besides candy and eggs, Easter dinner will be pretty much the same as last year:
Ham
Kielbasa (Spike's brother-in-law doesn't like ham)
Salad
Potatoes au gratin
Asparagus
Quiche
A very special surprise dessert

I'm already drooling and that doesn't even include the mass quantities of chips and salsa I plan on eating as I gave them up for Lent and have been missing them greatly! I wonder if the Easter Bunny will bring them in my Easter basket?
